- 3 handfuls of red and yellow Santorini cherry tomatoes
- 1 or 2 Spring onions
- Ciabatta bread

If you can, do this the day before to really let the flavors marinate. Put the tomato mix onto some toasted ciabatta bread. Then you’re all done! A healthier option would be to substitute the ciabatta for rye bread or Ryvita.
