  • 3 handfuls of red and yellow Santorini cherry tomatoes
  • 1 or 2 Spring onions
  • Parsley
  • Ciabatta bread
Method Chop the spring onions and parsley finely, slice the tomatoes and mix them together. If you can, do this the day before to really let the flavors marinate. Put the tomato mix onto some toasted ciabatta bread. Then you’re all done! A healthier option would be to substitute the ciabatta for rye bread or Ryvita.
